Carrot cake recipe contains carrot in batter, its origin is disputed either England or France. Carrot cake is a moist spice cake with cream cheese frosting. Many carrot cakes recipe has optional ingredients, such as nuts, raisins, pineapple, and coconut. 

It may be eaten plain but commonly glazed or covered with cream cheese frosting garnished with walnuts. It’s another variation is eggless carrot cake that too is an outstanding recipe contains spice flavors and super moist.

2 (260g) cups grated carrots
2 (260g) cups of walnut (you can use 1 cup of raisins or shredded coconut. Or make it plain).
4 Eggs
1 cup (240ml) vegetable oil
1 ½ (300g) cup brown sugar
½ (100g) cup granulated sugar
¾ (133g) unsweetened applesauce (instead of applesauce crushed pineapple can be used).
2 ½ (310g) cups all-purpose flour + 1 tablespoon
1teaspoon baking powder
1teaspoon baking soda
½ teaspoon salt
2 teaspoons cinnamon powder,
1 teaspoon ginger powder
½ teaspoon nutmeg
½ teaspoon cloves
1teaspoon vanilla extract

For Frosting:

1 (2 sticks or 225g) cup unsalted butter, at room temperature
340g cream cheese, at room temperature
2 (240g) powdered sugar
2 (200g) cups walnuts, crushed


Preheat the oven to 350 degrees F (or 180 degrees C). Grease three 8-inch cake pan and line with parchment paper                                                                                
In a bowl, sift flour, allspice, salt, baking powder, baking soda. Mix together
In another large bowl, beat brown sugar, granulated sugar, and eggs together with an electric hand- mixer on medium speed. Gradually pour vegetable and sifted flour with dry ingredients; beat until incorporate properly, Stop mixing.

Add walnuts, grated carrot and applesauce fold to incorporate with a spatula. Divide cake batter evenly among prepared cake pans and smooth the tops. Bake for 25-30 minutes until a toothpick inserted in the center comes out clean.

Cool the cakes at room temperature on a wire rack and remove cakes from pan.

Make Frosting:

Beat butter, cream cheese, vanilla extract with an electric mixture for 30 seconds, until becoming light and fluffy; add powdered sugar beating on medium-low to incorporate each addition.

Assemble Cake:

Use a serrated knife level off the cakes, place 1 cake layer on cake platter take ¼ spoon of frosting spread on top. Add another second layer of cake and do the same, set the last cake layer on top and spread the rest of the frosting over the top and sides.

 Garnish with crushed walnuts and chill for 30 minutes. Now the cake is ready to serve cut in slices and enjoy with family and friends.
