Christmas Snowball Cookies

 Christmas is in the offing, people love to eat these cookies around Christmas. These cookies also known as ‘Russian Tea Cake’. These cookies are simple to make at home with simple ingredients available at your kitchen. These cookies melt in your mouth once you start eating, simply cannot stop yourself. Use walnut and almond instead of pecans is more preferable in Indian cuisines.

Makes: 2 dozen cookies

Cook Time: 15 mins                       


2cups walnuts/pecans finely grounded ( toasted).
2 cups all-purpose flour
1/3 cup powdered sugar + 1 ½ cups  sugar more for coating

1 cup butter at room temperature
2 teaspoon vanilla extract
¼ teaspoon salt


Preheat oven on 350 degrees F and line a baking sheet with parchment paper, set aside. 
In a large bowl, use electric mixer beat butter, sugar, vanilla, and salt until smooth and creamy.
Use a spatula, add flour in 2 batches, add nuts and mix until fully incorporated now cover and refrigerate for 40 minutes. This dough can be stored in the fridge for 2 weeks.
After chilling, take dough the size of a tablespoon for cookies. Roll between the palms to achieve a rounded ball do not flatten leave them as little balls and place them 2 inches apart on the baking sheet.

Bake in preheated oven for 14-15 minutes, do not bake above this. The underside of the cookies should be only lightly browned but the top will still be pale in color which is actually needed,
Now take them out from the oven and cool cookies for 5 minutes. Place powdered sugar in a small bowl, set aside. While cookies are still warm, gently roll them in the powdered sugar. Ready to enjoy cookies with family and friends at Christmas.
