People use to ask what is Kolaches; Kolache is a pastry consisting of a filling typically fruit or cheese that holds a portion of surrounded by puffy dough, originating as a semisweet dessert from Central Europe and later a breakfast item in South London became popular in parts of the United States. 

Kolaches are also recognized as a semi-sweet bun or pastry cookies made from yeasted dough usually having a fruits & poppy seed, jam or nut filling, Kolache originally from Poland or Czechoslovakia. You can experiment in the recipe by using fruits like; apricot, raspberry, blueberry, guava, lemon, and prune or different types of store brought jams.

Makes: about 24 rolls

Ingredients:

·         2 tsp active dry yeast
·         2 tbsp sugar
·         2 cups whole milk, warm at (110-115 degree)
·         2 cups sifted all-purpose flour
·         4  egg yolks
·         1 tsp salt
·         ¾ cup butter softened
·         ¼ tsp grated nutmeg, 

       For Filling:

·         2 cups canned prune ( dried plum) or peach, blueberries, cherries or apple, if you don’t want to use canned fruits use fresh seasonal fruits or take nuts whichever you like and poppy seeds, roast the nuts & poppy seeds lightly caramelized them with sugar to make the filling.
·         2 tbsp honey, 

       For Egg Wash:

·         2 egg white, beaten
·         Splash (a few drops) of heavy cream or milk

Directions: 

First of all, we will make the filling: take a small pan put prunes along with honey and add enough water to bring boils, stir occasionally. Let them cook for 10 mins until most of the water is evaporated; mash the mixture with a spoon or fork to make a thicker paste-like jam. The same kind of filling you can make with blueberries, cherries, peach & apple or you can use store brought jam for filling.

To make cream cheese filling; take cream cheese at room temperature whisk will powdered sugar until smooth, your filling is ready.

In a bowl, dissolve yeast and 1 tablespoon sugar in warm milk; let it stand in 10 minutes. In a large bowl, combine 2 cups flour, remaining sugar; egg yolks, salt, butter, and yeast & milk mixture. Mix until a smooth and sticky dough is ready.

Turn out onto a floured surface and knead for about 6-8 minutes more. Add additional flour if necessary. Place dough in a greased bowl, turning once to greased top. Cover with a wet cloth and let them rise at room temperature for 2 hours until double in size or in the fridge for the whole night.

Now punch the dough down and roll out onto the floured surface to the ½-inch thickness and cut with 2- ½-inch cutter or divide into 12 equal parts and make round balls and flatten them, Line a 9” pie plate with parchment paper and,

 Place them in it with space in-between and cover them with a damp cloth; let them rise until doubled, for about 45 minutes at room temperature.

Next, stir egg white with the splash of heavy cream to make egg wash,

After 45 mins check them and firmly press indentation into the centre and fill each roll with a tablespoon of filling. Brush the kolaches with egg wash. Bake them into the preheated oven at 350 degrees for 15-25 minutes or until rolls are light golden brown. Transfer them to wire rack allow them cool & serve.
