Cream Cheese Cookies
If you talk about cookies; cream cheese cookies are my
all-time favorite. I am impressed with these gooey and delicious, soft cookies;
really heavenly. One more reason why I love these cookies because these are not
overly sweet and no need to glaze them, simply they are awesome.
These cream cheese cookies have strong cheese flavor mixed
with the richness of butter, the combined aroma of vanilla extract and almonds
enhance its taste, so I used crushed almond but if you like the smooth texture
of the cookies use almond extract but this is my personal preference, so this is completely
optional to use almonds. I have made different kinds of cookies with different flavors; Peanut butter cookies, Molasses Ginger Cookies but these are not dunkable.
The cream cheese naturally a key ingredient that makes these
cookies so yummy, but you can experiment in this recipe by using chocolate
chips or crushed Oreo cookies it will totally transform the taste of your
cookies. If you want to save your time plan ahead, this dough can be refrigerated
for a couple of the days and in this recipe already you have to fridge the
dough for at least an hour.

Yield: 12 cookies
Ingredients:
1 cup (125g) all-purpose flour ( you can use cake
flour too because it gives a silky texture).
½ cup ( 1 stick)
butter at room temperature
¾ cup (150g) sugar (either powdered or granulated)
4 oz (115g) cream cheese softened
1 egg
1tsp vanilla extract
2 tbsp crushed almonds (optional, you can use almond extract
too).
¼ tsp salt
Method:
Line the baking sheet with parchment paper. Cream the
cheese, butter, and sugar together until it becomes smooth and fluffy. Add egg and
vanilla extract combine well; add baking powder, salt, and flour in three
sections incorporate well. Lastly, add crushed almonds mix to combine.
Once the dough is done, refrigerate the dough for an hour. Meanwhile, preheat the oven to 375 degrees F.

Take out the dough from the fridge and form the bolls and gently
flatten (do not flatten too much otherwise cookies won’t puff up) them, if
the dough is sticky use flour on hands to form the bolls and for uniform bolls use an ice-cream scoop.
Bake for 10-12 minutes; take them out when you see the underside
edges turning golden brown, Watch them out in-between because it depends on
oven altitude; it can be varied for every oven. Let them cool on a wire rack for 5
minutes. Dust them with powdered sugar and serve it, will give an extra touch of
sweetness. These are so soft as melt in your mouth.
Cream cheese cookies dough can be prepared in a couple of
days in advance if you want to save time or don’t wait; you can store it in the refrigerator.
