Chocolate Fudge Cake made with both dark semi-sweet chocolate and unsweetened cocoa, It's topping Ganache is also made of chocolate; that can be made in no time, you have to melt chocolate and cream(use30% plus fat cream in order to set the Ganache) 3x30 seconds in microwave mix and cool, ready with its perfect consistency. Its intense chocolate flavor actually fulfills your chocolate craving that comes from both chocolate as well as unsweetened cocoa powder.

To make this cake you need not be planned ahead in just a shorter period you can make a perfect chocolaty and moist cake, based on the recipe of Brownie and somehow Mud cake. Here a tip you have to use in it, use hot water with a spoon of coffee that helps to bloom cocoa to enhance its chocolate flavor.  Chocolate fudge cake is somehow resembled with brownies because of its fudge texture, while baking cracking is normal on the top like brownies; the reason behind is cake has lifted in it from baking powder, it bursts through the crinkly top but it can be completely covered with the frosting. The difference between Fudge cake and Mud cake; mud cake is so dense that it can be cut cleanly with clean edges and no crumbs, in contrast, fudge cake has more of a cake-like texture.

 Always use unsweetened cocoa powder and dark semi-sweet chocolate instead of eating chocolate it does not melt properly and too thick in consistency, use of brown sugar works wonder. To make it easier substitute self-raising flour to plain flour + baking powder always available in your pantry.
You have to take care while handling the baked cake because of its fudge texture, let it cool completely in the pan it's too delicate to handle warm, so do not try to remove from pan.

Ingredients for the Chocolate Cake:

125 g dark chocolate chips 
17 g (1/4 cup) cocoa powder
275 g (1 1/4 cup) white sugar, (use caster sugar for the best results)
150 g (1 cup) self-raising flour, (substitute with all-purpose flour or plain)
65 ml (1/4 cup) vegetable oil
100 g (7 tbsp)  salted butter
2 eggs
1 tsp baking powder
1 tsp vanilla extract
1 tsp coffee granules (optional)
250 ml (1 cup) boiling hot water


250 ml (1 cup) heavy cream (full fat)
250 g ( 8 oz) dark chocolate chips


preheat the oven to 300 degrees F. grease the 9" cake pan and line with parchment paper.
Melt the chocolate and butter in a heatproof bowl for 3x30 seconds, mix in between until melts properly.  Add oil, vanilla, and sugar mix to combine well., add eggs one at a time incorporate well.
sift the dry ingredients; flour, cocoa, baking powder, mix the dry ingredients to wet ingredients mixture, mix to combine until no lump left. Add coffee mix hot water to the batter, incorporate well.
this will help the cocoa to bloom.
Pour the batter into the cake pan and bake for 35 minutes, follow the skewer test inserted into the middle of the cake comes out clean if batter sticks with the skewer then continue baking another 10 minutes. Don't stress if the surface of the cake cracked it will be covered with topping. Remove from oven & transfer to the wire allow it cool completely into the cake pan. Handle it gently due to its fudge texture while taking out of the pan. Please try not to over bake this cake this will results in dry out the cake. This cake is should be super moist and fudge, so to get desired results to use 2 teaspoons of baking powder this will rise your cake too much and crack from the middle, which will be covered with Ganache frosting. Baking soda is not used in the chocolate fudge cake

To make Ganache

Take a heatproof bowl put the cream and chocolate chips in the microwave 3x30 seconds, mix it in between until melts completely. Stir chocolate until smooth, bring it at room temperature, or put it in the fridge until getting a spreadable consistency like Nutella.
Spread over the top of the cake and side with the generous amount, use spoon to make the textured surface, decorate with chocolate shelves if you like.
