Make these Christmas Fruitcake Cookies in advance for gift-giving on Christmas eve also get a better taste with time. These Christmas Cookies have no rum or bourbon, so everybody can enjoy lightly brown chewy and fruity cookies. I have made these Christmas Fruitcake Cookies several times despite making Christmas Fruit Cake because these are incredibly delicious and easy to make, both are almost similar but I bet you would like more these cookies. I love this fruit and nut combination.

Yield: 3 dozen

 

Ingredients:

 

1 2/3 cup AP flour

1/2 tsp baking soda

1/4 tsp salt

½ tsp cinnamon powder

1tsp vanilla extract

2 eggs, room temperature

1 cup pitted dates, finely chopped

1/2 cup hazelnut, toasted (substitute with walnut)

1/2 cup raisins

1 cup cherries, halved

1/2 cup pecans, chopped

1 cup canned pineapple, diced

1 cup butter, softened

3/4 cup brown sugar

 

Directions:

 

Grease the baking sheets, preheat the oven to 325 degrees F. In a bowl beat the butter and sugar together until creamy and fluffy, beat in the eggs gradually, and vanilla into the butter mixture. Whisk the dry ingredients; flour, salt, cinnamon, and baking soda and mix into the wet ingredients also add all the dry fruits, nuts, pineapple, and cherries to this mixture, incorporate well to make the dough, chill the dough for 1 hour to get better shapes of the cookies.

 

Take the teaspoonful amount and drop the dough onto the greased baking sheet, bake for about 15 minutes or until turn golden brown, remove from oven and let them cool on a wire rack to get perfect texture and flavor. Store in an airtight container either at room temperature or for long into the fridge, put them between the wax paper layers will be fresh for 2-3 months into the fridge. Enjoy these crispy, crunchy, and chewy Fruitcake Christmas Cookies.

 

Note: Don't forget to chill the dough, the colder it is, the less it will spread.
