The recipe of vanilla wafers also known as sugar wafers first came into the existence in the late 19th century by Gustav A Mayer a German-American confectioner. with the time Vanilla wafers became an important ingredient of Banana Pudding of southern cuisine.
These wafers are the basic cookies used in many recipes and you can too experiment with these simple and inexpensive cookies. So no need to bring from the store make these buttery, sweet wafers per se. You Can use these wafer in Chocolate Mousse Cake but add 1 teaspoon of coffee powder in vanilla wafer batter before baking them, will enhance the taste of you chocolate mousse cake

Yield 3 dozen
Ingredients:
1/2 cup butter, softened
1 cup powdered sugar
3 eggs whites, room temperature
1 whole egg, room temperature
1 1/3 cup all-purpose flour
2 tsp vanilla extract
1/4 tsp salt
Instructions:
Preheat the oven to 350 degrees F. Line the baking tray with parchment paper. In a bowl beat the butter and powdered sugar together until pale and fluffy, gently add in egg whites and mix until creamy, also add the whole egg and mix to incorporate well.
Once the wet mixture ready add the flour, salt, and vanilla and mix just to combine, avoid over mixing. The batter will be soft and in running consistency, fill the batter in a piping bag with a medium pastry tip, pipe it almost in 2 teaspoon amount onto the cookies sheet, mound each almost 2inch apart so that the batter will be spread while baking.
Place the tray in the oven and bake for about 20 minutes or turn golden in color, not more than that. Remove the tray from the oven and let them cool, once cooled store the vanilla wafers into the air-tight container for a week or long put them in a plastic zipper bag into the freeze for a month. Use them for caramel banana pudding, strawberry shortcake fudge, homemade tagalongs, use them for no-bake cake crust with any flavor, more the merrier make simple sandwich cookies.
