In this cake I have used coconut flour, coconut oil instead of butter, lemon, and juicy blueberries to make a perfect combination, as coconut flour is not moist like almond flour, you need to add eggs more to raise it perfectly but if you add too much liquid it becomes soggy; I just want to aware about the fact so that you will have a perfectly wonderful dessert on the valentine's day. 


The special thing about the mug cake is just whisked a few easily available ingredients, microwave, and eat. something more you can do is top with a dollop of the vanilla ice-cream. Also, try to make a day ahead Pecan Sandies with coffee make sweet pair.

1/2 cup blueberries

1/2 cup coconut flour 

1/3 cup sweetener (stevia)

1 tsp baking powder

3 eggs

1/3 cup coconut oil

1/3 cup water

1/2 tsp lemon extract

Lemon zest

1/4 tsp salt

All these ingredients are for 5 mug cakes.


Take a bowl, whisk the eggs, coconut oil, lemon extract, water, and sweetener. In another bowl whisk the coconut flour, baking soda, salt together.


In a small bowl toss the blueberries with 1 teaspoon of coconut flour, now add dry ingredients to wet ingredients, mix to combine, add the blueberries and lemon zest into the batter, gently mix to combine.


Divide the batter into the mugs, bake each mug for about one and half minutes into the microwave. Enjoy the mug cakes with your friends and family.




As the coconut flour is dry it needs more eggs to rise properly, and if add much liquid to the batter, it becomes soggy.
