Spice Cake is a perfect autumn cake full of spices, it is a perfectly moist cake with cream cheese frosting. It is a tender most flavorful cake with frosting. Autumn is the perfect time to make this spiced cake, to bring a sweet caramel taste I have used brown sugar instead of white sugar that makes a perfect combination with the spices, and it goes so well with cream cheese frosting as the tanginess of frosting brings balance with the sweetness

 The success of the recipe depends on each ingredient used in it; first of all, will talk about base using all-purpose flour for thick wet batter, eggs bring texture and binding, for the sweetness used brown sugar instead of white sugar, to bring tenderness vegetable oil, buttermilk, and unsweetened applesauce would play a vital role. 

This cake is a spice cake that used spices; cinnamon, ginger, cloves, nutmeg, and allspice. salt and vanilla extract adds flavor. One of the secret ingredient in this cake i have used is molasses its strong flavor with the spices I love but its optional

I like to use nuts for garnishing so used walnut you can substitute with pecans. For the frosting simply use powdered sugar, butter for extra moisture, and for the flavor vanilla extract. 

Prep time: 20 minutes

Cook Time: 30 minutes

Cooling Time: 2 hours

Total Time: 2 hours n 50 minutes

Yield: 12 servings


For the cake:

2 1/2 cups all-purpose flour

4 eggs

1 3/4 cup packed dark brown sugar

1 cup vegetable oil

1 cup unsweetened applesauce

1/2 tsp ground nutmeg 

1/2 tsp ground cloves

1 tsp ground ginger

1 1/2 tsp ground cinnamon

1/2 tsp salt

2 tsp pure vanilla extract

2 tsp baking powder

1 tsp baking soda

For the Frosting:

8 ounces (1 block) full fat cream cheese, at room temperature

1/2 cup unsalted butter

3 cups confectioners sugar

1 tsp pure vanilla extract

1/8 tsp salt


Preheat the oven to 350 degrees F, grease the 9x13 inch pan, In a bowl sift the dry ingredients; flour, baking soda, baking powder, salt, and all the ground spices. 


In a bowl whisk the vegetable oil, brown sugar, applesauce, eggs vanilla extract together, stir in the dry ingredients to wet ingredient mix to incorporate well, transfer the batter to the prepared pan and bake for about 30 minutes.


 Check the doneness; insert the toothpick into the center of the cake that comes out clean; to prevent the excess browning of the cake loosely cover the top with the aluminum foil.


 Remove the cake from the oven and allow it cool on the wire rack, After 1-hour place the cake in the refrigerator to cool completely, this will make the frosting set properly.


To Make the Frosting: 


 In a large bowl using the handheld mixer beat the cream cheese and butter till smooth and creamy, add in the confectioner's sugar beat another 2 minutes and check the consistency if thicker add the 1/4 cup sugar and blend well,


Spread the frosting, and cover all around the cake and garnish all around them with ground walnuts, refrigerate the frosting for 30 minutes to set the frosting well, cut into the slices and serve. Cover the leftover cake and store it in the refrigerator for about 5 days.
